Our philosophy

We love Tornedalen and everything it has to offer. Our philosophy is that by working together with local suppliers and businesses, we can develop and strengthen Tornedalen. That's why we always choose to work as locally as possible – not only when it comes to food, but also other products and services.

Tornedalen and the area around the Arctic Circle offer wonderful seasonal changes and extremes, and we are convinced that this contributes to the fantastic quality of the local produce. Long winter dormancy combined with the spring flood and midnight sun means that everything that grows here tastes better.

The changing seasons have great advantages but also their challenges. The seasons pass quickly and can change overnight, which is why our menu is constantly changing. We want to bring out the best in our ingredients and show them at their best. That's why we let the ingredients that are best at the moment determine the menu. We also spend a lot of time preserving and storing ingredients for other seasons through drying, pickling, and fermentation, so that we can use local ingredients all year round. It's a bit like what people have always done, with an eye to the future.

So, with our food and our surroundings, we want to be part of and highlight the best of Tornedalen with our environment and resources. But of course, our background and experiences from other parts of the world have influenced us, and this is evident in the way we use local ingredients.

Our food

You are always welcome here. Our goal is to have a menu that suits you, whether you want to eat a three-course meal, just have a snack, or something in between. Our menus consist of local ingredients and inspiration from other parts of the world.

To enhance our ingredients, we use traditional methods such as pickling, marinating, fermenting, and smoking. We use our hot smoker to help us prepare food, both for smoking and grilling. Our wood-fired pizza oven is used for more than just pizzas!

Of course, we have plenty of options for those who eat plant-based diets or have allergies.

Our beverage

We appreciate the fact that good drinks are produced locally using local ingredients and old traditions, so it goes without saying that we stock them. Many of them are alcohol-free and perhaps among the best you have ever tasted. We love our berry drinks, kombucha, sima, and beer.

We complement our local beverages with carefully selected wines from smaller producers. To be included in our selection, we require that the wines be of the highest quality, and most of them are produced according to organic principles. We want the wines and their producers to treat the grapes with the same care that we treat our ingredients. Our wine list includes wines from around the world, but with a focus on Europe.
